1 12 ounces romaine lettuce- or more
2 ¼ cup pecan halves-toasted
3 16 ounces canned peas-chunks
4 Drained juice reserved

1 1 table spoon white wine vinegar
2 ½ teaspoon Dijon- style mustard – pale
3 1 teaspoon peanut oil or walnut oil
4 3 table spoon pear juice- approximately
5 ¼ teaspoon honey to taste
6 1 tablespoon blue cheese- fine crumbled, optional
1 Mix the salad ingredients in a large salad bowl
2 Mix the dressing ingredients, adding pear juice and honey to sweeten and moisten
3 Add crumbles cheese to dressing then combine with the salad and toss
4 Let it stand for about 10 minutes before serving
Now your salad is ready.
