Vanilla Ice Cream

Vanilla Ice Cream
1. Egg yolk-4
2. Caster or unrefined sugar, 100g
3. Vanilla pod or essence milk
4. Whole or skimmed-375ml
5. Cream or non-diary cream-125ml
1. Mix the yolk and sugar in a bowl until almost white
2. Boil the milk with the vanilla pod or essence in a thick based pan
3. Mix onto the eggs and sugar
4. Return to the clean pan
5. Place on a low heat
6. Stir continuously with a wooden spoon until the mixture coat the back of spoon
7. Pass through a fine strainer into bowl
8. Freeze in an ice cream machine, gently add the cream
